Pickle Brine:

  • Water 800.0 ml
  • Apple cider vinegar 350.0 ml
  • Salt 70.0 g
  • Bay leaves 4.0 pc
  • Peppercorn 5.0 g
  • Jalapenos, sliced 10.0 g

Preparation

  1. Pickle Brine:

    • Combine all ingredients in a saucepot. Bring to a simmer and let it cool down completely.
    • Add the chicken wings and brine for a maximum of 3 hours.
  2. Chef’s Tips:

    • Good for 700g chicken wings.
    • Great with sweet type of glazes.
