Ethiopian Cuisine
In this series, you’ll discover dishes commonly found on an Ethiopian food menu and the ingredients that typify this uniquely African cuisine. Learn from Head Chef and Founder of Delina, Nazareth Kefle, on how to make traditional Ethiopian food such as injera (flatbread), doro wot (chicken stew), and atakilt wot (vegan stir fry).
1. What is Ethiopian Cuisine Part One: Key Ingredients
Ethiopian cuisine is synonymous with mild, spicy flavours and is typically served on platters to share. In this video, you’ll learn about the different Ethiopian spices and key ingredients used to make Ethiopian food.
2. What is Ethiopian Cuisine Part Two: Equipment
Discover all the cooking tools and utensils you need to make the food you’d typically find on an Ethiopian restaurant menu, including a mitad hotplate, shakla dist clay pot and woven basket mat. Whilst traditional Ethiopian cooking is done using a clay pan over a fire, Chef Nazareth Kefle shows you how to use modern equipment to achieve the same results.
3. How to Make Injera
Injera is the main component of Ethiopian cuisine and found on every Ethiopian restaurant menu. In this video, Chef Nazareth Kefle shares her injera recipe and shows you how to make the fermented flatbread using gluten-free teff grain from East Africa.
4. How to Make Doro Wot Part 1
Doro Wot is an Ethiopian stew made with chicken and spiced with butter and Ethiopian berbere. In this video, Chef Nazareth Kefle shows you step by step how to make this popular Ethiopian cuisine, which is served on injera in a sharing platter.
5. How to Make Doro Wot Part 2
In this video, Chef Nazareth Kefle takes you through the final steps of making Ethiopian stew, including when to add spiced butter and mekelesha (a spice mix made from nutmeg, cardamom and black pepper).
6. How to Make Vegan Atakilt Wot
Atakilt Wot is a vegan Ethiopian stew made with cabbage, carrots, potatoes and spices and is cooked in the same way as stir fry. In this video, you’ll learn how to make this unique African cuisine which is often served on Ethiopian restaurant menus as a side dish or on its own with injera.
